Underneath it all we’re all just Flesh and Bones

There are sane people….

…and then there are chefs.

A sane person would find a local grocer with a good deal for frozen high quality albacore, slice it thinly while still frozen and then thaw it to the point where it can be chopped together to a fresh and sumptious tuna tartar. A real chef spends two days on the phone to different fishmongers in Sri Lanka, finds a good deal, and then gets a whole fricking yellow fin tuna shipped fresh by airplane to the restaurant after which he or she proceeds to butcher the whole thing on site.

Cost? The same. Taste? Worlds apart.
